- Chop onions and garlic, as much or as little as you want.
- Add it to a mince-mix. I chose the 20 percent fat one because I think it has more flavour.
- Mix it all together, using your hands is easier, and add one whisked egg to it (this makes the ingredients stick together).
- Whilst mixing, season your meat-mix, with anything you like. I used salt, pepper and cumin. I didn’t have many spices with me unfortunately. But don’t be afraid to experiment.
- Separate your mixture into balls, and really compress them so they don’t come apart when you cook them…I’ve done that a few too many times. (If you want to make meatballs, then skip to number 7.) Also you can make them as big or as small as you please, within reason of course.
- Now flatten the mix in a rounded shape, not too thick if not it’ll take ages to cook all the way through.
- Once you’re pleased with the shape, fry them in a pan until cooked. It shouldn’t take longer than 20 minutes, if it does you’ve done them too thick.
- Now enjoy your food with any sides of your choice. 🙂

Quick to prepare, wait to cook – meals

These meals don’t take much effort to make, they just take a bit of time to cook. These are also meals that you need to think about the day before for defrosting purposes. I haven’t followed a recipe for any of these, just be creative:
- Garlic, butter chicken – chop as much garlic as you want, personally I have the whole bulb, melt a lot of butter, add some spices or seasoning (it’s good to experiment to see what you like) to the butter, including the garlic. Cook the chicken for about 10 minutes then pour the garlic butter sauce over the chicken, I use 2 chicken breasts and that’s more than enough for myself. Cook for another 10 minutes, then turn over and cook for 20 minutes. It’s up to you what you want with it, my go-to is microwave egg fried rice. The sauce from the chicken flavours the rice after serving.
- Tacos (a personal favourite) – buy a taco kit, or if you’re feeling brave then by all means make the taco mix by yourself (I have done, I’m moving up in the world). All you need is the kit, and some mince. Cook the mince, add the seasoning mix, put the taco shells in the oven and you’re done. Add your salsa or salad if you like, to your taco shell when serving. Voila.
- Chicken fajitas – again, buy a fajita kit or make the seasoning mix yourself (ngl, I use the same seasoning mix I made for both tacos and fajitas). Chop your chicken into chunks or strips, cook until white all the way through, add the seasoning mix, microwave your wraps if you want, I prefer them cold, and then serve, adding your salsa or salad.
I forgot to mention, all these meals go really well with cheese. I don’t like cheese so I sort of forgot about it. Sorry, don’t hate, I get roasted enough by my bf who loves the stuff.
Quick and easy meals
Whether you want a quick fix after a long day, or you’re a student a uni and simply cba to cook something fancy, here’s my top things to cook:
- PASTA (so cliche) – just boil some water, add pasta, leave for 10 mins, drain the water out, add a pot of sauce, heat, and you’re good to go. If you want to be a bit more adventurous, maybe chop some onion or garlic and add it to the sauce, and stick some garlic bread in the oven for 15 mins.
- OMELETTE – depending how much you like to eat depends on how many eggs you use. I use about 5 eggs, whisk them and then chop some ham or chicken, or any other food you have lying around that needs using, add it to the eggs. Season how you like, I generally add a bit of salt and pepper. Now cook, preferably on a non-stick pan.
- SPAG BOL – boil water, add spaghetti, cook mince in a different pan, add a sauce with the mince, and serve together. This is only quick if you’ve already defrosted the mince.
- Anything pre-cooked from the freezer – burgers, pizza, sausages etc. can all be cooked from frozen and don’t take long to cook.
You can also cheat by using microwave meals when you don’t have to prepare anything, except your belly.
